Preparation

In a large frying pan, add the olive oil and cook over medium heat.

Add onions and cook while stirring occasionally until it’s half transparent.

Add the zucchini, garlic, oregano, red pepper flakes with a pinch of salt.

Then cook and stir it occasionally until simmering.

Add Baidar Tomato paste. Simmer for 1 minute.

On low heat, add the peeled tomatoes and mushrooms. Let it simmer.

While the sauce is simmering, bring a large pot of boiling salted water.

Add the pasta (fettuccine) for 9 minutes, then drain it.

First, add the spinach leaves and the fresh basil to the sauce, then add the drained pasta (fettuccine).

Cook for one minute while stirring constantly, till the pasta is covered with the sauce.

Serve it sprinkled with Parmesan on top.
